This Easy, Delicious Taco Meatloaf is the Perfect Busy Day Meal
For the longest time, the question “Who wants meatloaf?” stirred fear in the eyes of my children. They’d moan, sometimes stomp their feet, and beg me not to torture them.
I love meatloaf, so where their hatred for it came from, I have no idea! But let me tell you, Nana’s Taco Meatloaf changed their minds, and made meatloaf night in my house much more enjoyable!

You might be asking yourself, “What is Nana’s Taco Meatloaf?” Well, the real question you should be asking is how you can make it and bring joy to your starving children’s lives! I’m going to answer that question for you today!
Who is Nana?
“Nana” is what my kids call my mother-in-law, Bonnie. When she’s not busy being an amazing grandma, she crochets the most fabulous afghans and other homemade pieces!

When your future mother-in-law shares her recipes, that’s how you know she approves of you!
Tim and I had just become “official”. We were talking one day and he mentioned that his mom makes a delicious taco meatloaf. I was intrigued.
I love my mom’s meatloaf, don’t get me wrong. It was perfect with mashed potatoes and green beans.
But what was this taco meatloaf that sounded so incredibly different than hers? Tim asked her if she would be ok with him giving me the recipe, and thank the Lord she said yes!
This recipe led to what, if I remember correctly, was my first conversation with my future mother-in-law.
After I cooked it, I messaged her with the rave reviews my children gave it and thanked her profusely for letting me have it. That opened a non-stop line of communication between us, and started a beautiful friendship!
Six years later, if you ask my 11-year-old what his favorite food is, the answer remains the same: Nana’s Taco Meatloaf!
So, without further delay, here is the recipe that started it all! Nana’s Taco Meatloaf!
A delicious combination of tacos and meatloaf for a quick and easy dinner.
- 1 lb Ground Beef
- 3 Eggs
- 1/4 cup Oatmeal
- 1 pkg Taco Seasoning
- 1 1/4 Cup Shredded Cheese set aside 1/4 cup for topping
- 1/2 Small Onion
- 1 cup Salsa reserve 1/2 for topping
Preheat oven to 375 degrees
Mix all ingredients in a medium bowl
Spray loaf pan with non-stick cooking spray
Add mixture to pan
Cover with foil and cook for 45-50 minutes
Remove foil and spread salsa on top
Sprinkle reserved shredded cheese on top
Continue cooking for 10-15 minutes until cheese is melted
*Cooking times may vary based on equipment. Adjust timing as needed.*
Amounts are approximate, and can be adjusted according to taste.
