Bacon Stuffed Brussels Sprouts

A deliciously different take on my Brussels Sprouts with Bacon Recipe. Perfect as a side dish or even as finger foods for a dinner party!

  • 1 lb Large Brussels Sprouts
  • 4 qts Water
  • 1 bowl Ice Water
  • 1/4 lb Bacon diced
  • 1/2 Small Onion diced
  • 2 cloves Garlic diced
  • 1/4 cup Beef Broth
  1. Preheat oven to 400

  2. Bring water to a boil and add Brussels Sprouts

  3. Let Brussels Sprouts boil for approximately 5-10 minutes, until fork tender (time will depend on size of sprouts)

  4. Remove Brussels Sprouts from boiling water and put into a bowl of cold ice water (to stop the cooking process)

  5. Slice Brussels Sprouts in half and cut out centers

  6. Pan fry bacon pieces

  7. Add onions to bacon and cook until transluscent

  8. Chop and add centers of Brussels Sprouts and garlic to bacon and onions

  9. Fill halved Brussels Sprouts with mixture and line up in baking pan

  10. Pour Beef Broth into pan with Brussels Sprouts

  11. Bake for 30-45 minutes or until Brussels Sprouts are browned and tender
